4 boneless, skinless chicken breasts (about 6 oz each)
2 cups fresh spinach, chopped
1/2 cup crumbled feta cheese
2 tablespoons cream cheese, softened
1 clove garlic, minced
1 tablespoon olive oil
1/2 teaspoon dried oregano
1/4 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon butter
Instructions
Preheat oven to 400°F (200°C).
Place each chicken breast between two sheets of plastic wrap and pound to an even 1/2-inch thickness using a rolling pin or meat mallet.
In a bowl, combine chopped spinach, feta, cream cheese, garlic, oregano, salt, and pepper until well mixed.
Lay chicken breasts flat and divide the spinach-feta mixture evenly among them, placing it in the center. Roll up each breast tightly, tucking in the sides, and secure with toothpicks.
Heat olive oil and butter in an oven-safe skillet over medium-high heat. Sear the stuffed chicken breasts for 2-3 minutes per side, until golden brown.
Transfer the skillet to the preheated oven and bake for 15-18 minutes, or until the internal temperature reaches 165°F (74°C).
