Ingredients
1 sheet puff pastry, thawed
2 tbsp olive oil
1 small onion, finely chopped
2 cloves garlic, minced
10 oz fresh spinach, roughly chopped
4 oz feta cheese, crumbled
1/4 cup grated Parmesan cheese
1 large egg, beaten
1/4 tsp salt
1/4 tsp black pepper
1/4 tsp dried dill
Instructions
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a large skillet, heat olive oil over medium heat. Add onion and cook until softened, about 3 minutes. Add garlic and cook 1 minute more.
Add spinach to the skillet and cook, stirring, until wilted, about 2-3 minutes. Remove from heat and let cool slightly. Squeeze out excess moisture.
In a bowl, combine the spinach mixture, feta, Parmesan, half of the beaten egg, salt, pepper, and dill. Mix well.
On a lightly floured surface, roll out puff pastry sheet to a 12x12 inch square. Cut into 4 equal squares, then cut each square diagonally to make 8 triangles.
Place a spoonful of filling (about 2 tablespoons) near the wide end of each triangle. Fold the wide end over the filling, then continue rolling toward the point. Place on prepared baking sheet, point side down.
Brush the tops with remaining beaten egg. Bake for 20-25 minutes, until golden brown. Serve warm or at room temperature.
Tips
For a crispier pastry, chill the filled pastries for 10 minutes before baking.
These can be made ahead and reheated in a 350°F oven for 5 minutes.
Substitute frozen chopped spinach (thawed and squeezed dry) if fresh is unavailable.
