Ingredients
2 large eggs
1 tablespoon milk
Salt and freshly ground black pepper to taste
1 teaspoon olive oil
1 cup fresh baby spinach
2 tablespoons crumbled feta cheese
Instructions
In a small bowl, whisk together eggs, milk, salt, and pepper until well combined.
Heat olive oil in a non-stick skillet over medium heat. Add spinach and cook, stirring, until wilted, about 1 minute. Spread spinach evenly in the pan.
Pour the egg mixture over the spinach. Cook without stirring until edges are set, about 2 minutes.
Sprinkle feta cheese over one half of the omelet. Using a spatula, fold the other half over the cheese.
Cook for another 30 seconds, then slide onto a plate. Serve immediately.
Tips
For a fluffier omelet, add a pinch of baking powder to the eggs.
