Ingredients
1 cup cauliflower florets, cut into small pieces
1/2 cup carrot, peeled and thinly sliced
1/2 cup green beans, trimmed and cut into 1-inch pieces
1/4 cup red onion, thinly sliced
2 green chilies, slit lengthwise
1 tablespoon salt
1 teaspoon turmeric powder
1/2 cup white vinegar
1/4 cup water
1 tablespoon sugar
1 teaspoon mustard seeds
1/2 teaspoon red chili flakes
2 tablespoons vegetable oil
Instructions
In a large bowl, combine cauliflower, carrot, green beans, red onion, and green chilies. Sprinkle with salt and turmeric, toss well, and let sit for 30 minutes.
In a small saucepan, combine vinegar, water, and sugar. Bring to a boil, then remove from heat and let cool slightly.
Heat oil in a small pan over medium heat. Add mustard seeds and cook until they pop, about 30 seconds. Add red chili flakes and stir for 10 seconds. Remove from heat.
Pour the warm vinegar mixture over the vegetables. Add the tempered oil and spices. Stir well to combine.
Transfer to a clean glass jar. Let cool to room temperature, then refrigerate. The pickles are ready to eat after 24 hours and will keep for up to 2 weeks.
