Ingredients
- 2 tablespoons olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 cup long-grain white rice
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon ground cumin
- 1/4 teaspoon turmeric
- 1/2 cup tomato sauce
- 2 cups vegetable broth
- 4 cups chopped spinach or Swiss chard (stems removed)
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet or pot over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook 1 minute more.
- Stir in rice, smoked paprika, cumin, and turmeric. Cook, stirring, for 1-2 minutes until rice is lightly toasted.
- Add tomato sauce and broth; bring to a boil. Reduce heat to low, cover, and simmer for 15 minutes.
- Gently fold in the greens, cover, and cook another 5-7 minutes until rice is tender and greens are wilted.
- Remove from heat, let stand covered for 5 minutes. Fluff with a fork, season with salt and pepper, and serve.
Tips
- For extra flavor, use chicken broth instead of vegetable broth.
- Add a pinch of saffron threads soaked in 2 tablespoons warm water for a classic touch.
- Serve with lemon wedges and chopped fresh parsley.
