  1. Rinse sushi rice in cold water until water runs clear. Combine rice and water in a rice cooker or pot; cook according to manufacturer's instructions or until tender.
  2. In a small bowl, mix rice vinegar, 2 tablespoons sugar, and 1 teaspoon salt. When rice is done, transfer to a large bowl, fold in vinegar mixture, and let cool to room temperature.
  3. Slice Spam lengthwise into 8 equal slices. In a small bowl, combine soy sauce, mirin, and 2 tablespoons sugar to make teriyaki sauce.
  4. Heat a large skillet over medium-high heat with a little oil. Fry Spam slices until lightly browned on both sides. Pour teriyaki sauce over Spam and cook until glaze thickens, turning to coat.
  5. Line a musubi mold or a small rectangular container with plastic wrap. Place a strip of nori on a cutting board. Fill mold with about 1/3 cup rice, press firmly. Place a glazed Spam slice on top, then press another layer of rice on top. Remove from mold and place on the nori strip. Wrap nori around the rice block, sealing with a grain of rice. Repeat with remaining ingredients.
  6. Serve immediately or wrap individually in plastic wrap for later.
