Ingredients
1 can (12 oz) Spam, cut into small cubes
3 cups cooked white rice, preferably day-old
2 tablespoons vegetable oil, divided
2 large eggs, beaten
1/2 cup frozen peas and carrots, thawed
3 green onions, sliced
2 tablespoons soy sauce
1 teaspoon sesame oil
Salt and white pepper to taste
Instructions
Heat 1 tablespoon vegetable oil in a large wok or skillet over medium-high heat. Add Spam cubes and cook until browned and crispy, about 4 minutes. Remove Spam and set aside.
Add remaining 1 tablespoon oil to the wok. Pour in beaten eggs and scramble until just set. Remove and set aside with Spam.
Add the rice to the wok, breaking up any clumps. Stir-fry for 2-3 minutes until heated through.
Add the peas and carrots, green onions, soy sauce, and sesame oil. Stir-fry for 1 minute.
Return Spam and eggs to the wok. Toss to combine. Season with salt and white pepper to taste. Serve hot.
Tips
For best results, use cold, day-old rice to prevent mushiness.
Add a drizzle of sriracha or chili oil for heat.
Garnish with extra sliced green onions or furikake.
