Ingredients
1 can (12 oz) Spam, sliced into 8 pieces
4 large eggs
2 tablespoons milk
1 tablespoon butter
Salt and pepper to taste
Cooked rice for serving (optional)
Instructions
Slice Spam into 8 even slices (about 1/4 inch thick).
In a nonstick skillet over medium-high heat, cook Spam slices for 2-3 minutes per side until crispy and browned. Transfer to a plate.
In a bowl, whisk eggs, milk, salt, and pepper until well combined.
Reduce heat to medium-low. Melt butter in the same skillet, then pour in egg mixture. Gently stir with a spatula until eggs are softly set, about 2-3 minutes.
Serve Spam and eggs together, optionally with rice.
Tips
For extra flavor, add a splash of soy sauce to the eggs while whisking.
Leftover Spam and eggs can be stored in the fridge for up to 2 days.
