Ingredients
2 cups dried soybeans
Water for soaking and boiling
1 tablespoon vegetable oil
1 teaspoon salt
1/2 teaspoon garlic powder (optional)
1/2 teaspoon onion powder (optional)
Instructions
Rinse the dried soybeans and place them in a large bowl. Cover with water by at least 2 inches and soak for 8-12 hours or overnight. Drain and rinse.
Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
Place the soaked soybeans in a large pot and cover with fresh water. Bring to a boil, then reduce heat and simmer for 1 hour, or until tender. Drain well.
In a bowl, toss the cooked soybeans with vegetable oil, salt, garlic powder, and onion powder until evenly coated.
Spread the soybeans in a single layer on the prepared baking sheet.
Roast for 45-50 minutes, stirring every 15 minutes, until golden brown and crunchy. Let cool completely before serving.
