Ingredients
1 cup unsweetened soy milk
1 shot (1 oz) espresso or 1/2 cup strong brewed coffee
1-2 teaspoons sweetener (sugar, agave, or maple syrup), optional
1/4 teaspoon vanilla extract, optional
Instructions
Brew a shot of espresso or prepare 1/2 cup of strong coffee.
In a small saucepan, heat the soy milk over medium heat until steaming, but not boiling. Alternatively, steam the soy milk using an espresso machine steam wand until frothy.
If desired, stir in sweetener and vanilla extract into the hot soy milk.
Pour the hot soy milk into a mug, then slowly pour the espresso over the top. Stir gently to combine.
If you have frothed milk, spoon the foam on top. Serve immediately.
Tips
For a richer latte, use barista-style soy milk which froths better.
Adjust sweetness to taste; the latte can be made unsweetened.
To make it iced, cool the coffee and soy milk, then pour over ice.
