  1. In a small bowl, sprinkle gelatin over 1/2 cup cold water. Let stand for 5 minutes to bloom.
  2. In a small saucepan, combine lemon juice, lime juice, sugar, and corn syrup. Cook over medium heat, stirring, until sugar dissolves and mixture comes to a simmer.
  3. Remove from heat and add bloomed gelatin, stirring until completely dissolved.
  4. Stir in citric acid and tartaric acid (if using). Add a few drops of food coloring if desired.
  5. Pour mixture into a 9x5-inch loaf pan lined with plastic wrap. Refrigerate until firm, about 2 hours.
  6. Turn the set gelatin out onto a cutting board. Cut into thin strips (about 1/4 inch wide and 3 inches long) to form worms.
  7. Toss worms in a mixture of additional citric acid and sugar (1 tablespoon each) for extra sour coating, if desired.
