Ingredients
2 tablespoons unsalted butter
2 large yellow onions, finely chopped
1 teaspoon kosher salt, divided
1 cup sour cream
1/2 cup mayonnaise
1/2 teaspoon garlic powder
1/4 teaspoon black pepper
1 tablespoon fresh chives, chopped (optional)
Instructions
Melt butter in a large skillet over medium heat. Add onions and 1/2 teaspoon salt; cook, stirring occasionally, until deeply golden and caramelized, about 20 minutes. Let cool completely.
In a medium bowl, combine sour cream, mayonnaise, garlic powder, remaining 1/2 teaspoon salt, and pepper. Stir in cooled onions.
Cover and refrigerate for at least 1 hour to allow flavors to meld. Garnish with chives before serving, if desired.

For a richer flavor, use full-fat sour cream and mayonnaise.
