Ingredients
4 shallots, thinly sliced
4 cloves garlic, thinly sliced
1/4 cup vegetable oil
1/2 teaspoon salt
1/4 cup chopped fresh cilantro
1/4 cup chopped fresh mint
1/4 cup chopped fresh basil
1 tablespoon sesame seeds
Instructions
Line a plate with paper towels and set aside.
Place the sliced shallots and garlic in a small bowl and toss with salt.
Heat the oil in a small skillet over medium heat. Add the shallot-garlic mixture and cook, stirring frequently, until golden brown and crispy, about 5-7 minutes.
Using a slotted spoon, transfer the fried shallots and garlic to the prepared plate to drain and cool.
In a small bowl, combine the cooled shallot-garlic mixture with the chopped cilantro, mint, basil, and sesame seeds. Toss gently to mix.
Serve immediately as a topping for soups, or store in an airtight container at room temperature for up to 3 days.
