Ingredients
1 cup sorghum grains
3 cups water
1/2 teaspoon salt
1 cup cherry tomatoes, halved
1 cucumber, diced
1/2 red onion, thinly sliced
1/2 cup fresh parsley, chopped
1/4 cup fresh mint, chopped
1/4 cup extra virgin olive oil
2 tablespoons lemon juice
1 clove garlic, minced

Instructions
Rinse the sorghum under cold water. In a medium saucepan, combine sorghum, water, and 1/2 teaspoon salt. Bring to a boil, then reduce heat to low, cover, and simmer for 20-25 minutes until tender but chewy. Drain any excess water and let cool.
In a large bowl, combine the cooked sorghum, cherry tomatoes, cucumber, red onion, parsley, and mint.
In a small bowl, whisk together olive oil, lemon juice, and minced garlic. Season with salt and pepper.
Pour the dressing over the salad and toss well to combine.
Refrigerate for at least 30 minutes to allow flavors to meld. Serve chilled or at room temperature.
