Ingredients
2 cups water
1 cup granulated sugar
1/2 cup light corn syrup
1/4 teaspoon salt
2 cups fruit puree (e.g., strawberry, mango, or raspberry)
2 tablespoons lemon juice
Instructions
In a medium saucepan, combine water, sugar, corn syrup, and salt. Bring to a boil over medium-high heat, stirring until sugar dissolves. Remove from heat and let cool completely.
Once cool, stir in fruit puree and lemon juice until well combined.
Cover and refrigerate until thoroughly chilled, at least 2 hours or overnight.
Pour the mixture into an ice cream maker and churn according to manufacturer's instructions until it reaches a soft-serve consistency.
Transfer to an airtight container and freeze for at least 4 hours or until firm.
Tips
For a smoother texture, strain the fruit puree to remove seeds or fibers.
If you don't have an ice cream maker, pour the mixture into a shallow dish and freeze, stirring every 30 minutes until firm.
Store sorbet in the freezer for up to 2 weeks. Let it sit at room temperature for 5 minutes before scooping.
