  2. In a separate bowl, whisk egg yolks. Slowly pour about 1 cup of the hot milk mixture into the yolks, whisking constantly to temper.
  3. Pour the yolk mixture back into the saucepan. Cook over medium-low heat, stirring constantly with a wooden spoon, until mixture thickens and coats the back of the spoon (about 170°F on a thermometer). Do not let it boil.
  4. Remove from heat and stir in vanilla extract. Strain through a fine-mesh sieve into a clean bowl. Let cool to room temperature, then cover and refrigerate until completely chilled, at least 4 hours or overnight.
  5. Pour the chilled custard into an ice cream maker and churn according to manufacturer's instructions until it reaches a soft-serve consistency.
  6. Serve immediately in bowls or cones, topped with chocolate sauce, caramel sauce, whipped cream, sprinkles, and a cherry.
