Ingredients
2 cups water
2 cups granulated sugar
1 tablespoon caramel color (or 1/4 cup dark corn syrup)
1 teaspoon citric acid
1 teaspoon caffeine powder (optional)
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon vanilla extract
1/2 teaspoon lime juice
1/2 teaspoon orange zest
1/4 teaspoon ground coriander
1/4 teaspoon ground allspice
1/4 teaspoon salt
6 cups chilled carbonated water
Instructions
In a saucepan, combine water and sugar. Bring to a boil, stirring until sugar dissolves. Reduce heat and simmer for 5 minutes to create a simple syrup.
Remove from heat and stir in caramel color, citric acid, caffeine (if using), cinnamon, nutmeg, vanilla, lime juice, orange zest, coriander, allspice, and salt. Mix well.
Let the syrup cool completely to room temperature, then refrigerate until chilled, about 1 hour.
To serve, fill glasses with ice. For each glass, combine 1/4 cup of the chilled syrup with 3/4 cup carbonated water. Stir gently and serve immediately.
Tips
Adjust sweetness by reducing or increasing sugar to taste.
For a caffeine-free version, omit the caffeine powder.
Store leftover syrup in the refrigerator for up to 2 weeks.
