Ingredients
200g dried soba noodles
3 tablespoons soy sauce
2 tablespoons mirin
1 tablespoon sugar
1/2 cup dashi stock (or water with 1/2 teaspoon dashi powder)
2 green onions, thinly sliced
1 sheet nori, cut into thin strips
1 teaspoon wasabi (optional)
1 tablespoon toasted sesame seeds
Instructions
Bring a large pot of water to a boil. Cook soba noodles according to package directions until tender, about 4-5 minutes. Drain and rinse under cold water until cool. Drain well.
In a small saucepan, combine soy sauce, mirin, sugar, and dashi stock. Bring to a simmer over medium heat, stirring until sugar dissolves. Remove from heat and let cool to room temperature.
Divide noodles between two serving bowls. Pour the dipping sauce into small individual bowls or over the noodles as desired.
Top noodles with sliced green onions, nori strips, and sesame seeds. Serve with wasabi on the side if using.
Tips
For a warm version, skip rinsing the noodles and serve with hot broth.
Add protein like cooked shrimp or tofu for a more substantial meal.
