Ingredients
8 oz soba noodles
1 cup frozen shelled edamame, thawed
1 large carrot, julienned
1 red bell pepper, thinly sliced
4 green onions, sliced
1/4 cup chopped fresh cilantro
1/4 cup soy sauce
2 tbsp rice vinegar
1 tbsp sesame oil
1 tbsp honey or maple syrup
1 tsp grated fresh ginger
1 tbsp toasted sesame seeds
Instructions
Cook soba noodles according to package directions. Drain and rinse under cold water. Drain well.
In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, honey, and ginger to make the dressing.
In a large bowl, combine noodles, edamame, carrot, bell pepper, green onions, and cilantro.
Pour dressing over salad and toss to combine.
Sprinkle with sesame seeds and serve chilled or at room temperature.
Tips
For extra protein, add grilled chicken or tofu.
