Ingredients
3 ripe bananas
2 cups fresh spinach leaves
1 tablespoon lemon juice (optional, to prevent browning)
Instructions
Peel the bananas and slice them into 1-inch chunks.
Arrange banana chunks in a single layer on a parchment-lined baking sheet. If desired, lightly toss with lemon juice to prevent browning.
Wash and dry spinach leaves, then pack them into an ice cube tray, filling each compartment about three-quarters full. Press down gently.
Fill each spinach compartment with water to cover the leaves.
Place both the baking sheet with banana chunks and the ice cube tray in the freezer. Freeze until solid, at least 2 hours or overnight.
Once frozen, transfer banana chunks to a resealable freezer bag. Pop out spinach cubes and store in a separate freezer bag. Use as needed in smoothies.
