These elegant smoked salmon canapés feature mini blinis topped with crème fraîche, smoked salmon, and fresh dill, perfect for parties or appetizers.

Ingredients
1/2 cup buckwheat flour
1/2 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 large egg
3/4 cup milk
2 tablespoons melted butter
1/2 cup crème fraîche
200g smoked salmon, sliced
2 tablespoons fresh dill, chopped
1 tablespoon lemon juice
Capers for garnish (optional)
Instructions
In a bowl, whisk together buckwheat flour, all-purpose flour, baking powder, and salt.
In another bowl, beat the egg, then whisk in milk and melted butter.
Pour wet ingredients into dry and stir until just combined (lumps are fine).
Heat a non-stick pan over medium heat and lightly grease. Drop tablespoonfuls of batter to form small blinis (about 2 inches). Cook until bubbles form on surface, about 2 minutes, then flip and cook 1 minute more. Transfer to a plate.
In a small bowl, mix crème fraîche with lemon juice and half the dill.
To assemble, spread a small dollop of crème fraîche mixture on each blini. Top with a piece of smoked salmon, a sprinkle of remaining dill, and a few capers if using.
Arrange on a serving platter and serve at room temperature.
Tips
Blinis can be made a day ahead and stored in an airtight container; reheat briefly before serving.
For a gluten-free version, substitute both flours with a gluten-free blend.
Add a thin slice of cucumber or radish for extra crunch.
