Ingredients
4 large eggs
2 tablespoons milk or cream
2 tablespoons unsalted butter
2 ounces smoked salmon, chopped
1 tablespoon fresh dill, chopped
Salt and freshly ground black pepper to taste
2 tablespoons cream cheese, softened (optional, for extra richness)
Instructions
In a small bowl, whisk together eggs, milk, and a pinch of salt and pepper until well combined.
Melt butter in a nonstick skillet over medium heat. Pour in egg mixture and let it set for about 30 seconds.
For scrambled eggs: Using a spatula, gently push the eggs from the edges toward the center, forming soft curds. Cook until just set but still moist. Remove from heat.
For omelet: Let eggs cook undisturbed until edges are set and center is almost set. Sprinkle smoked salmon and dill over half of the omelet. Fold the other half over the filling and slide onto a plate.
Gently fold in chopped smoked salmon and dill into the scrambled eggs. Serve immediately, optionally topped with a dollop of cream cheese.

For a richer flavor, use crème fraîche instead of milk.
