Ingredients
1 everything bagel, split and toasted
2 large eggs
1 tablespoon unsalted butter
2 tablespoons cream cheese, softened
2 ounces smoked salmon
1 teaspoon capers, drained
1 thin slice red onion (optional)
Salt and freshly ground black pepper to taste
Instructions
In a small bowl, beat the eggs with a pinch of salt and pepper until just combined.
Melt butter in a non-stick skillet over medium-low heat. Add the eggs and cook, stirring gently with a spatula, until soft curds form and eggs are just set (about 2-3 minutes). Remove from heat.
Spread cream cheese on both halves of the toasted bagel.
