  2. Heat a large cast-iron skillet or griddle over high heat until smoking. Place two beef balls in the skillet, spacing apart.
  3. Immediately place a piece of parchment paper over each ball and press down firmly with a spatula or burger press until about 1/4 inch thick.
  4. Season generously with salt and pepper. Cook for 2 minutes until edges are browned and crispy.
  5. Flip patties, place a slice of cheese on each, and cook for 1 minute more. Remove to a plate.
  6. Repeat with remaining beef balls. While patties cook, butter cut sides of buns and toast on a separate skillet or in oven until golden.
  7. Assemble burgers: bottom bun, lettuce, tomato, onion (if using), patty with cheese, ketchup, mustard, pickles, top bun.
  8. Serve immediately.
