Ingredients
1 cup raw almonds
1 cup raw cashews
1/2 cup raw pumpkin seeds
1/2 cup unsweetened coconut chips
1 tablespoon olive oil
1/2 teaspoon salt
1/2 teaspoon smoked paprika
1/2 cup dried cranberries
1/2 cup dark chocolate chips
Instructions
Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a large bowl, combine almonds, cashews, pumpkin seeds, and coconut chips. Drizzle with olive oil, sprinkle with salt and smoked paprika, and toss to coat evenly.
Spread mixture in a single layer on the prepared baking sheet. Bake for 10-12 minutes, stirring halfway, until nuts are toasted and coconut is golden.
Remove from oven and let cool completely on the baking sheet (about 15 minutes).
Transfer cooled mixture to a large bowl. Add dried cranberries and dark chocolate chips; toss to combine.
Store in an airtight container at room temperature for up to 2 weeks.

For a sweeter version, add a tablespoon of maple syrup to the oil mixture.
