Ingredients
1 (3-4 pound) sirloin tip roast
2 tablespoons olive oil
1 tablespoon kosher salt
1 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon dried thyme
1 teaspoon dried rosemary
Instructions
Remove the roast from the refrigerator 1 hour before cooking to bring to room temperature.
Preheat oven to 450°F (230°C).
In a small bowl, mix salt, pepper, garlic powder, onion powder, thyme, and rosemary.
Pat the roast dry with paper towels. Rub olive oil all over the meat, then coat evenly with the spice mixture.
Place the roast fat-side up on a rack in a roasting pan.
Roast at 450°F for 15 minutes, then reduce oven temperature to 325°F (160°C) and continue roasting until internal temperature reaches 130°F (54°C) for medium-rare, about 50-60 minutes more.
Remove from oven, tent loosely with foil, and let rest for 15-20 minutes before slicing against the grain.
