Ingredients
2 slices sourdough or ciabatta bread
2 teaspoons olive oil or softened butter
1 teaspoon Dijon mustard (optional)
3 ounces sliced roasted turkey breast
2 slices provolone or Swiss cheese
1/4 cup fresh baby spinach or arugula (optional)
Instructions
Preheat a panini press or a skillet over medium heat.
Spread olive oil or butter on one side of each bread slice. Place bread oiled side down on a cutting board.
Spread mustard on the inside of one slice (if using). Layer turkey, cheese, and spinach on that slice. Top with the other bread slice, oiled side up.
Place sandwich in the panini press and cook until bread is golden and cheese melts, about 3-4 minutes. If using a skillet, cook 2-3 minutes per side, pressing down with a spatula.
Remove from press, let cool slightly, then slice in half and serve.
Tips
For extra flavor, add a few slices of roasted red pepper or a drizzle of balsamic glaze.
Serve with a side of tomato soup or a simple green salad.
If you don't have a panini press, use a heavy skillet and press with another pan or a foil-wrapped brick.
