Ingredients
1 cup long-grain white rice
8 cups water or chicken broth
1/2 teaspoon salt
1 tablespoon ginger, thinly sliced
1 green onion, sliced (for garnish)
1 teaspoon sesame oil (optional)
Instructions
Rinse the rice under cold water until the water runs clear. Drain well.
In a large pot, combine the rinsed rice, water or broth, salt, and ginger slices. Bring to a boil over high heat.
Reduce heat to low, cover the pot with a lid slightly ajar to prevent overflow, and simmer for 45-60 minutes, stirring occasionally to prevent sticking. The congee is done when the rice has broken down and the porridge is creamy and thick.
Remove the ginger slices if desired. Taste and adjust salt.
Ladle into bowls, garnish with sliced green onion and a drizzle of sesame oil if using. Serve hot.

For a smoother congee, use a whisk to stir vigorously during the last 10 minutes of cooking.
