Ingredients
1 tablespoon olive oil
1 medium onion, diced
2 carrots, diced
2 celery stalks, diced
2 cloves garlic, minced
1 pound boneless skinless chicken breasts
6 cups low-sodium chicken broth
1 teaspoon dried thyme
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup frozen peas
2 tablespoons chopped fresh parsley
Instructions
Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery; cook until softened, about 5 minutes. Add garlic and cook 1 minute more.
Add chicken breasts, chicken broth, thyme, salt, and pepper. Bring to a boil, then reduce heat and simmer until chicken is cooked through, about 15-20 minutes.
Remove chicken from pot and shred with two forks. Return shredded chicken to pot.
Stir in frozen peas and cook for 2 minutes. Remove from heat and stir in parsley. Adjust seasoning to taste.
Ladle into bowls and serve hot.
Tips
For a heartier soup, add 1 cup of cooked egg noodles or rice along with the peas.
