Ingredients

- 1 piece kombu (dried kelp), about 4 inches square
- 2 dried shiitake mushrooms
- 1 teaspoon soy sauce
- 1/2 teaspoon salt
- 1 tablespoon sake (optional)
Instructions
- Place water, kombu, and shiitake mushrooms in a medium saucepan. Let soak for 15 minutes.
- Bring to a gentle simmer over medium heat. Do not boil. Remove kombu just before water comes to a full boil.
- Simmer for 10 minutes, then remove shiitake mushrooms.
- Stir in soy sauce, salt, and sake if using. Adjust seasoning to taste.
- Strain broth through a fine-mesh sieve if desired. Serve hot.
