Ingredients
1 lb large shrimp, peeled and deveined
1/2 tsp chili powder
1/2 tsp cumin
1/4 tsp garlic powder
Salt and pepper to taste
1 tbsp olive oil
4 large flour tortillas (10-inch)
2 cups shredded Monterey Jack cheese
1/2 cup diced red bell pepper
1/4 cup chopped fresh cilantro
1/2 cup sour cream (for serving)
1/2 cup salsa (for serving)
Instructions
In a bowl, toss shrimp with chili powder, cumin, garlic powder, salt, and pepper.
Heat olive oil in a large skillet over medium-high heat. Add shrimp and cook for 2-3 minutes per side until pink and opaque. Remove from skillet and chop into bite-sized pieces.
Wipe skillet clean and place over medium heat. Lay one tortilla in the skillet. Sprinkle 1/4 cup cheese evenly over the tortilla. Top with 1/4 of the chopped shrimp, 2 tablespoons red bell pepper, and 1 tablespoon cilantro. Sprinkle another 1/4 cup cheese on top. Place a second tortilla on top.
Cook until the bottom tortilla is golden brown and cheese starts to melt, about 2-3 minutes. Carefully flip with a spatula and cook the other side until golden and cheese is fully melted, another 2-3 minutes.
Repeat with remaining ingredients to make 4 quesadillas. Cut each into wedges and serve with sour cream and salsa.
Tips
For extra flavor, add a squeeze of lime juice to the cooked shrimp.
You can substitute Monterey Jack with cheddar or a Mexican blend cheese.
Serve with guacamole or pico de gallo for a complete meal.
