Ingredients
1 lb large shrimp, peeled and deveined
2 bell peppers (red and green), cut into 1-inch pieces
1 large red onion, cut into 1-inch pieces
3 tablespoons olive oil
2 tablespoons lime juice
2 cloves garlic, minced
1 teaspoon chili powder
1 teaspoon ground cumin
1/2 teaspoon smoked paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
8 wooden skewers, soaked in water for 30 minutes
Instructions
In a bowl, whisk together olive oil, lime juice, garlic, chili powder, cumin, smoked paprika, salt, and pepper.
Add shrimp to the marinade and toss to coat. Cover and refrigerate for 15 minutes.
Preheat grill to medium-high heat (about 400°F).
Thread shrimp, bell peppers, and onion pieces onto skewers, alternating ingredients.
Grill skewers for 3-4 minutes per side, until shrimp are pink and opaque and vegetables are charred.
Remove from grill and serve immediately with warm tortillas, guacamole, sour cream, and salsa.
Tips
If using metal skewers, no soaking needed.
Can also be cooked on a grill pan or under the broiler.
