Ingredients
1 lb large shrimp, peeled and deveined
2 tbsp olive oil, divided
1 tsp chili powder
1/2 tsp ground cumin
1/2 tsp smoked paprika
1/2 tsp salt
1/4 tsp black pepper
1 red bell pepper, sliced
1 green bell pepper, sliced
1 yellow onion, sliced
6 cups mixed salad greens
1 avocado, sliced
1/4 cup fresh cilantro, chopped
For the dressing: 3 tbsp lime juice, 2 tbsp olive oil, 1 clove garlic (minced), 1/2 tsp honey, salt and pepper to taste
Instructions
In a bowl, toss shrimp with 1 tbsp olive oil, chili powder, cumin, paprika, salt, and pepper. Set aside.
Heat remaining 1 tbsp olive oil in a large skillet over medium-high heat. Add bell peppers and onion; cook, stirring occasionally, until tender and charred, about 5-7 minutes. Remove from skillet and set aside.
In the same skillet, add shrimp in a single layer. Cook 2-3 minutes per side until pink and opaque. Remove from heat.
In a small bowl, whisk together dressing ingredients: lime juice, olive oil, minced garlic, honey, salt, and pepper.
Divide salad greens among plates. Top with cooked peppers and onions, shrimp, avocado slices, and cilantro. Drizzle with dressing and serve.
Tips
For extra heat, add a sliced jalapeño to the peppers and onions while cooking.
Serve with warm tortillas or tortilla chips on the side.
