A fusion of sizzling shrimp fajitas and cheesy quesadillas, this quick and easy meal is perfect for a weeknight dinner.

Ingredients
1 lb large shrimp, peeled and deveined
1 red bell pepper, sliced
1 green bell pepper, sliced
1 onion, sliced
2 tbsp olive oil
1 tsp chili powder
1/2 tsp cumin
1/2 tsp garlic powder
Salt and pepper to taste
4 large flour tortillas
2 cups shredded Monterey Jack or Mexican blend cheese
Lime wedges and sour cream for serving
Instructions
In a bowl, toss shrimp with chili powder, cumin, garlic powder, salt, and pepper.
Heat 1 tbsp olive oil in a large skillet over medium-high heat. Add shrimp and cook 2-3 minutes per side until pink. Remove and set aside.
Add remaining 1 tbsp oil to skillet. Sauté bell peppers and onion until tender-crisp, about 4-5 minutes. Season with salt and pepper. Remove from heat.
Wipe skillet clean. Place one tortilla in the skillet over medium heat. Sprinkle 1/4 cup cheese on half of the tortilla. Top with 1/4 of the shrimp and 1/4 of the pepper-onion mixture. Sprinkle another 1/4 cup cheese on top. Fold tortilla over.
Cook until golden brown on bottom, about 2-3 minutes. Flip carefully and cook until cheese is melted and second side is golden, another 2-3 minutes. Repeat with remaining tortillas.
Cut each quesadilla into wedges. Serve with lime wedges and sour cream.
Tips
For extra flavor, add a squeeze of lime juice to the shrimp while cooking.
You can substitute chicken or steak for the shrimp.
Store leftover quesadillas in the fridge and reheat in a skillet or oven.
