Ingredients
8 oz dried chow mein noodles or 12 oz fresh
1 lb large shrimp, peeled and deveined
2 tbsp vegetable oil, divided
1 cup shredded cabbage
1 cup bean sprouts
1/2 cup sliced carrots
1/2 cup sliced bell pepper
3 green onions, sliced
2 cloves garlic, minced
1 tbsp grated fresh ginger
3 tbsp soy sauce
1 tbsp oyster sauce
1 tsp sesame oil
1/2 cup chicken or vegetable broth
1 tbsp cornstarch mixed with 2 tbsp water
Instructions
Cook noodles according to package directions until al dente. Drain and rinse under cold water. Set aside.
In a small bowl, whisk together soy sauce, oyster sauce, sesame oil, broth, and cornstarch slurry. Set aside.
Heat 1 tbsp oil in a wok or large skillet over high heat. Add shrimp and cook until pink, about 2 minutes per side. Remove and set aside.
Add remaining 1 tbsp oil to the wok. Add garlic, ginger, and green onions; stir-fry for 30 seconds. Add cabbage, carrots, and bell pepper; stir-fry for 2 minutes until crisp-tender.
Add noodles and bean sprouts; toss to combine. Pour sauce over and stir-fry for 1-2 minutes until sauce thickens and coats noodles.
Return shrimp to the wok; toss everything together. Serve immediately.
Tips
Substitute chicken or pork for shrimp if desired.
Add more vegetables like snap peas or mushrooms.
To make it spicier, add a teaspoon of chili garlic sauce.
