- 8 oz lo mein noodles or spaghetti
- 1 lb large shrimp, peeled and deveined
- 2 tbsp vegetable oil, divided
- 2 cloves garlic, minced
- 1 tsp fresh ginger, grated
- 1 red bell pepper, thinly sliced
- 2 cups broccoli florets
- 2 carrots, julienned
- 4 oz snow peas, trimmed
- 3 green onions, sliced
- 3 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tsp sesame oil
- 1/4 cup chicken or vegetable broth
Instructions
- Cook noodles according to package directions; drain and set aside.
- In a small bowl, whisk together soy sauce, oyster sauce, sesame oil, and broth; set aside.
- Heat 1 tbsp oil in a large wok or skillet over high heat. Add shrimp and cook until pink, about 2 minutes per side. Remove and set aside.
- Add remaining 1 tbsp oil to the wok. Add garlic and ginger; cook for 30 seconds.
- Add bell pepper, broccoli, carrots, and snow peas. Stir-fry for 3-4 minutes until tender-crisp.
- Add noodles, shrimp, and sauce to the wok. Toss everything together and cook for 1-2 minutes until heated through.
- Garnish with green onions and serve immediately.
