Ingredients
1 cup (2 sticks) unsalted butter, softened
1/2 cup granulated sugar
2 cups all-purpose flour
1/4 teaspoon salt
Instructions
Preheat oven to 325°F (165°C). Line a baking sheet with parchment paper.
In a large bowl, beat butter and sugar together until light and fluffy, about 3 minutes.
Gradually add flour and salt, mixing until just combined. Do not overmix.
Turn dough onto a lightly floured surface and roll to 1/2-inch thickness. Cut into desired shapes using cookie cutters, or cut into rectangles.
Place cookies 1 inch apart on prepared baking sheet. Prick each cookie with a fork.
Bake for 18-20 minutes, until edges are lightly golden. Cool on baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Tips
For extra flavor, add 1 teaspoon vanilla extract or lemon zest.
Store in an airtight container at room temperature for up to 2 weeks.
Dough can be refrigerated for up to 3 days before rolling and baking.
