  3. Gradually add flour and salt, mixing until just combined. Do not overmix.
  4. Turn dough onto a lightly floured surface and roll to 1/2-inch thickness. Cut into desired shapes using cookie cutters, or cut into rectangles.
  5. Place cookies 1 inch apart on prepared baking sheet. Prick each cookie with a fork.
  6. Bake for 18-20 minutes, until edges are lightly golden. Cool on baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
