Ingredients
4 large ripe tomatoes, diced
2 cucumbers, peeled and diced
2 green bell peppers, diced
1 red onion, thinly sliced
1/2 cup chopped fresh parsley
1/2 cup sunflower oil
3 tablespoons red wine vinegar
Salt to taste
1 cup grated sirene cheese (or feta cheese)
Instructions
In a large bowl, combine diced tomatoes, cucumbers, bell peppers, red onion, and parsley.
In a small bowl, whisk together sunflower oil, red wine vinegar, and salt until emulsified.
Pour the dressing over the vegetables and toss gently to coat.
Transfer the salad to a serving platter or individual plates.
Top with grated sirene cheese and serve immediately.
