Ingredients
1 lb boneless lamb or beef sirloin, cut into 1-inch cubes
1 large onion, cut into chunks
1 large bell pepper, cut into chunks
1 pint cherry tomatoes
1/4 cup olive oil
3 tablespoons lemon juice
2 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
In a bowl, whisk together olive oil, lemon juice, garlic, cumin, paprika, salt, and pepper. Add meat cubes and toss to coat. Cover and refrigerate for at least 30 minutes (or up to 4 hours).
If using wooden skewers, soak them in water for 30 minutes to prevent burning.
Thread meat, onion, bell pepper, and cherry tomatoes onto skewers, alternating ingredients.
Preheat grill to medium-high heat. Grill skewers, turning occasionally, until meat is cooked to desired doneness (about 10-15 minutes for medium).
Serve immediately with rice or pita bread.
