2 cups all-purpose flour
2 cups granulated sugar
1 teaspoon baking soda
1/2 teaspoon salt
1 cup unsalted butter (2 sticks)
1 cup water
1/4 cup unsweetened cocoa powder (for chocolate version) or omit for vanilla
2 large eggs
1/2 cup buttermilk
1 teaspoon vanilla extract
For the frosting: 1/2 cup unsalted butter (1 stick)
1/4 cup unsweetened cocoa powder (for chocolate frosting) or 3 cups powdered sugar for vanilla
1/3 cup milk
3 cups powdered sugar
1 teaspoon vanilla extract
Instructions
Preheat oven to 350°F (175°C). Grease a 9x13-inch baking pan.
In a large bowl, whisk together flour, sugar, baking soda, and salt.
In a saucepan, combine butter, water, and cocoa powder (if using chocolate cake). Bring to a boil, then pour over the flour mixture and stir until well combined.
In a small bowl, beat eggs, buttermilk, and vanilla. Add to the batter and mix until smooth.
Pour batter into prepared pan and bake for 20-25 minutes, or until a toothpick inserted in center comes out clean. Cool completely.
For the frosting: In a saucepan, melt butter. Add cocoa powder (if making chocolate frosting) and milk, stirring until smooth. Remove from heat and whisk in powdered sugar and vanilla until smooth. Spread over cooled cake.
Tips
For a vanilla version, omit cocoa powder from cake and frosting; use 3 cups powdered sugar and 1/3 cup milk for frosting.
Let cake cool completely before frosting to prevent melting.
