Ingredients
1 cup white sesame seeds
1/2 cup granulated sugar
1/4 cup honey
2 tablespoons unsalted butter
1/4 teaspoon salt
1/2 teaspoon vanilla extract
1/4 teaspoon baking soda
Instructions
Line an 8x8-inch baking pan with parchment paper, leaving overhang on two sides.
In a dry skillet over medium heat, toast sesame seeds, stirring constantly, until golden and fragrant, about 3-4 minutes. Transfer to a bowl.
In a medium saucepan, combine sugar, honey, butter, and salt. Cook over medium heat, stirring, until mixture reaches 300°F (hard crack stage) on a candy thermometer, about 8-10 minutes.
Remove from heat and quickly stir in vanilla, baking soda, and toasted sesame seeds until well combined.
Immediately pour the mixture into the prepared pan and spread evenly with a spatula (mixture will be hot).
Let cool completely at room temperature for about 30 minutes, then break into pieces or cut with a knife.

For a variation, substitute half the sesame seeds with black sesame seeds.
