Ingredients
1 lb boneless skinless chicken breasts, cut into bite-sized pieces
2 tbsp soy sauce
1 tbsp cornstarch
1 tbsp sesame oil
2 tbsp vegetable oil, divided
3 cups broccoli florets
3 cloves garlic, minced
1 tbsp grated fresh ginger
1/4 cup low-sodium chicken broth
2 tbsp hoisin sauce
1 tbsp rice vinegar
1 tbsp brown sugar
1 tbsp toasted sesame seeds
2 green onions, sliced
Instructions
In a bowl, toss chicken with soy sauce and cornstarch until coated. Let marinate 10 minutes.
Heat sesame oil and 1 tbsp vegetable oil in a wok or large skillet over high heat. Add chicken and stir-fry until golden and cooked through, about 5-6 minutes. Remove and set aside.
Add remaining 1 tbsp vegetable oil to the wok. Add broccoli and stir-fry 2 minutes. Add garlic and ginger; cook 30 seconds.
Add broth, hoisin sauce, rice vinegar, and brown sugar. Stir and bring to a simmer.
Return chicken to the wok. Toss to coat and cook 1-2 minutes until sauce thickens.
Sprinkle with sesame seeds and green onions. Serve immediately over rice.

For extra crunch, blanch broccoli in boiling water for 1 minute before stir-frying.
Substitute chicken thighs for more flavor.
