Ingredients
1 lb boneless skinless chicken breasts, cut into bite-sized pieces
2 tablespoons soy sauce
1 tablespoon rice vinegar
1 tablespoon honey
1 tablespoon sesame oil
2 teaspoons cornstarch
2 tablespoons vegetable oil
2 cloves garlic, minced
1 tablespoon fresh ginger, grated
1 red bell pepper, sliced
1 cup snow peas
2 tablespoons sesame seeds, toasted
2 green onions, sliced
Instructions
In a small bowl, whisk together soy sauce, rice vinegar, honey, sesame oil, and cornstarch until smooth. Set aside.
Heat vegetable oil in a wok or large skillet over high heat. Add chicken and stir-fry until golden and cooked through, about 4-5 minutes. Remove chicken and set aside.
Add garlic and ginger to the wok and stir-fry for 30 seconds. Add bell pepper and snow peas, and stir-fry for 2 minutes until crisp-tender.
Return chicken to the wok. Pour the sauce over and stir-fry for 1 minute until sauce thickens and coats everything.
Sprinkle with sesame seeds and green onions. Serve immediately over steamed rice.
Tips
For extra heat, add a pinch of red pepper flakes with the garlic.
To toast sesame seeds, cook in a dry skillet over medium heat until golden, stirring frequently.
