In a bowl, combine chicken, soy sauce, sesame oil, honey, ginger, and garlic. Marinate for 10 minutes.
Heat a skillet over medium-high heat. Cook chicken until browned and cooked through, about 5-7 minutes. Let cool slightly, then shred or dice.
In a large bowl, mix cooked chicken, cabbage, carrots, green onions, and sesame seeds.
Place a spring roll wrapper with a corner facing you. Spoon about 2 tablespoons of filling near the bottom corner. Fold the bottom corner over the filling, then fold in the sides, and roll tightly. Seal the top corner with a dab of water.
Heat about 2 inches of vegetable oil in a deep pot to 350°F (175°C). Fry spring rolls in batches until golden brown, about 3-4 minutes. Drain on paper towels.
Serve warm with sweet chili sauce.
Tips
For a healthier version, bake at 400°F for 15-20 minutes, brushing with oil.
