Ingredients
12 large sea scallops (about 1 lb), side muscle removed
Salt and freshly ground black pepper
2 tablespoons vegetable oil
3 tablespoons unsalted butter
1 tablespoon fresh lemon juice
1 tablespoon chopped fresh parsley
Instructions
Pat scallops dry with paper towels and season both sides with salt and pepper.
Heat oil in a large nonstick skillet over high heat until shimmering. Carefully add scallops in a single layer without crowding (cook in batches if needed).
Sear until golden crust forms, about 1.5-2 minutes per side. Transfer scallops to a plate.
Reduce heat to medium. Add butter to skillet and cook, swirling often, until butter turns golden brown and smells nutty, about 1-2 minutes.
Remove from heat. Stir in lemon juice and parsley. Return scallops to skillet and toss to coat. Serve immediately.
Tips
For best sear, ensure scallops are very dry before cooking.
Serve over a bed of arugula or with crusty bread to soak up the sauce.
Do not overcrowd the pan; cook in batches if necessary.
