  1. Preheat oven to 225°F (110°C). Score the pork skin lightly with a sharp knife in a diamond pattern, being careful not to cut through the fat.
  2. Rub the salt, pepper, and paprika all over the skin side. Place skin-side up on a wire rack set over a baking tray.
  3. Roast for 2-3 hours until the skin is very dry and hard, but not browned. Remove from oven and let cool completely.
  4. Cut the dried skin into small squares (about 1 inch).
  5. Heat 2 inches of oil in a deep pot to 350°F (175°C). Fry the pieces in batches for 1-2 minutes until puffed and golden. Drain on paper towels.
  6. Season immediately with extra salt if desired. Serve warm or at room temperature.
