2 tablespoons milk

1/8 teaspoon black pepper
1 tablespoon unsalted butter
1/4 cup shredded cheddar cheese
2 tablespoons chopped fresh chives
1/4 cup diced bell pepper (optional)
Instructions
In a medium bowl, whisk together eggs, milk, salt, and pepper until well combined and frothy.
Melt butter in a nonstick skillet over medium-low heat. Add egg mixture and let it set for about 30 seconds without stirring.
Using a spatula, gently push the cooked eggs from the edges toward the center, allowing uncooked eggs to flow to the edges. Repeat until eggs are mostly set but still slightly moist.
Remove pan from heat. Stir in cheese, chives, and bell pepper (if using) until cheese melts and eggs are creamy. Serve immediately.
