Ingredients
4 large eggs
2 tablespoons unsalted butter
2 cups fresh baby spinach
1/4 cup grated Parmesan cheese
2 tablespoons heavy cream
Salt and freshly ground black pepper to taste
Pinch of nutmeg (optional)
Instructions
Crack eggs into a bowl, add cream, and whisk until well combined. Season with salt, pepper, and nutmeg.
Melt 1 tablespoon butter in a non-stick skillet over medium heat. Add spinach and cook, stirring, until wilted, about 2 minutes. Transfer to a plate and keep warm.
Reduce heat to low. Add remaining 1 tablespoon butter to the skillet. Pour in egg mixture and cook gently, stirring constantly with a spatula, until eggs are softly set but still creamy, about 4-5 minutes.
Remove from heat. Gently fold in Parmesan cheese and wilted spinach. Serve immediately.
