Ingredients
- 1 lb lamb shoulder or beef shin, cut into 1-inch pieces
- 2 tbsp vegetable oil
- 1 large onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 1 turnip (about 8 oz), peeled and diced
- 1 leek, white and light green parts, sliced
- 1/2 cup pearl barley
- 8 cups beef or lamb stock
- 1 bay leaf
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp chopped fresh parsley
Instructions
- Heat oil in a large pot over medium-high heat. Brown the meat in batches, then set aside.
- Add onion, carrots, celery, turnip, and leek to the pot; cook for 5 minutes until softened.
- Return meat to pot. Add barley, stock, bay leaf, salt, and pepper. Bring to a boil.
- Reduce heat to low, cover, and simmer for 1 1/2 hours until meat and barley are tender.
- Remove bay leaf. Skim off any excess fat. Adjust seasoning.
- Stir in parsley and serve hot.
Tips
- For a thicker broth, mash some of the vegetables against the side of the pot before serving.
- Can be made ahead and refrigerated for up to 3 days; flavors improve.
- Serve with crusty bread or oatcakes.
