Ingredients
2 tablespoons unsalted butter
1 small onion, finely chopped
3 tablespoons all-purpose flour
2 cups whole milk
1 cup heavy cream
1 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon ground nutmeg
3 cups cooked ham, diced
4 large russet potatoes (about 2 pounds), peeled and thinly sliced
1 1/2 cups shredded sharp cheddar cheese
Instructions
Preheat oven to 375°F (190°C). Grease a 9x13-inch baking dish.
In a large saucepan, melt butter over medium heat. Add onion and cook until softened, about 3 minutes. Stir in flour and cook for 1 minute.
Gradually whisk in milk and cream. Cook, stirring constantly, until thickened, about 3-5 minutes. Season with salt, pepper, and nutmeg.
Layer half of the sliced potatoes in the prepared dish. Top with half of the ham and half of the sauce. Sprinkle with half of the cheese. Repeat layers with remaining potatoes, ham, sauce, and cheese.
Cover with foil and bake for 40 minutes. Remove foil and bake for an additional 20-25 minutes, until potatoes are tender and top is golden and bubbly.
Let rest for 10 minutes before serving.
